Radiatori (“radiator” shape) are masters at clinging to sauce. With this advantage, we can feature more vegetal sauces to pair. Our Spicy Cauliflower Stracotto (long-cooked, or braised) features caramelized onions, Calabrian chiles, tomato and white wine. We add a mix of spices and liven it with lemon to create a sauce base that keeps calling you back for additional bites. The flowering cauliflower utilized is from Nichols Farm (IL) and is smaller and more tender, like broccolini, but cauliflower. Adding basil to our radiatori dough gives a fresh and fragrant base to the deep-flavored, rich sauce.
