1 lb. Broccoli Leaf Bucatini with Peppers & Smoked Pecorino (feeds 2-3)
Late Summer is really it's own food season -- we love taking a largely discarded ingredient and making the most of it. The broccoli leaf is a superfood, full of nutrients and flavor. We break this leaf down into a pasta dough and create a deeply flavorful bucatini with it. The stewed peppers make up the sauce in an Italian tradition called peperonata, with notes of white wine vinegar, onion, San Marzano tomato, fresh herbs, garlic and capers. The smoked pecorino crema is added to the plate at the end for a complex but highly complementary finish.
