Scarpinocc are a shoe-shaped filled pasta, resembling wooden clogs - as fellow clog wearers in the kitchen, we are particularly invested in this shape. This pasta originated in a town called Parre (Lombardy) and is a cousin of Casoncelli from Brescia, another filled pasta we love in the colder months. Scarpinocc are vegetarian while Casoncelli are meaty. These Scarpinocc are filled with fresh dug yukon potatoes from Nichols Farm (IL) that are combined with creme fraiche, olive oil and salt. The salsa verde is made with a combination of fresh herbs, capers, lemon zest and rendered beef bone marrow.
