Tortelloni are simply larger tortellini, one of Emilia Romagna’s most famous creations. We love producing them and we love it even more when we can combine these incredible flavors. This week’s tortelloni are filled with asparagus, crescenza cheese, ricotta, lemon and tarragon. Black truffle is the ideal flavor pairing here. Lastly, our sauce is a simple emulsified butter with spring garlic shoots, our favorite ingredient of all-time. Finished with a bit of lemon zest, this dish is a spring knockout.
