Burro e Oro translates to “butter and gold” - oro comes directly from the word pomodoro, or tomato. We have some first-of-the-season Nichols Farm cherry tomatoes that this sauce is made from. Vibrant and savory, this buttery tomato sauce also gets local baby rapini that’s been gently cooked. Our veal filling is a mousseline, fluffy, tender and super juicy. We fold in some of our pickled ramp bottoms to the mix for a supremely delicious combination of springy flavors.
