Cappelletti means “little hats,” a round stuffed pasta with a little brim to trap the sauce and a pocket full of beautiful veal mousseline. The filling contains veal, parmesan, nutmeg, Sicilian oregano and garlic. For our sauce, we take heirloom (sweet) Jimmy Nardello peppers, smoke them, and then steep them in cream. We use the infused Nardello cream as the base for making creamed spigarello. Spigarello is an older, sweeter cousin to broccoli rabe - considered an ancient leafy green, we’re able to get these fresh from Nichols Farm in IL.
