Lobster 'nduja Tortelloni with Green Garlic Burro

Tortelloni are simply larger versions of their famous relatives, tortellini. Larger means more filling and that’s a bonus for anyone enjoying these tortelloni.   They’re stuffed with poached lobster and ’nduja, a spicy spreadable salami from our friends/neighbors at Tempesta. The sauce is a green spring garlic emulsified butter sauce that doesn’t overpower the lobster but compliments its natural sweetness and the warm heat of the ’nduja.
