Pasta Amalfitana will typically yield a beautiful mixture of lemon and seafood delights. Our taste of the sea comes via cuttlefish ink Tagliolini, a thin pasta we love in the warmer months. The sauce is a version of pasta al limone adding umami from our chile + anchovy soffritto that cooks with garlic and white wine before being added to the final sauce with a heap of fresh chopped herbs. Loads of flavor found here.
