They have a hollow interior larger than rigatoni, and trap the sauce inside and out. You want to eat these with the most crave-able of accompaniments, which for us is our Vodka sauce. Cappelletti are “little hats” that ...Cappelletti are “little hats” that our pastaio team has made into more of a flower-shape as we head into May (April showers, May flowers, yada yada) and these are filled with one of the best fresh creamy cheeses in existence, crescenza (also dba stracchino). This cheese is made with cow’s milk and has a natural tanginess from its ripening process. For our filling, we add a touch of pickled thai chile and green garlic to the mix for an added pop. The sauce is varied in texture with a pine nut soffritto and ramp bottoms that have been stewed in olive oil until tender with shallot, fresh herbs, lemon zest, and ramp greens all in the fold.
